Wild rice is a chewy and delicious way to add more fiber and color to plain meal. Even though it takes longer to prepare, wild rice recipes aren’t hard to execute. Personally, I think the best way to cook wild rice is to mix it with other grains.
Cooking wild rice alone would make for a delicious and high fiber meal but I prefer to do something a bit different- and that is to mix it with plain white rice. Since it’s more expensive than plain rice (and comes in a smaller package), this is an excellent way to enjoy it if you’re cooking on a budget.
For this easy and delicious wild rice recipe, I decided to create a savory vegan side dish by adding some garlic and parsley. The end result is a perfect companion to chickpeas in tomato sauce or any other savory entree.
Delicious Garlic & Parsley Wild Rice Recipe
Ingredients
- 2 cups vegetable broth
- 1/4 cup water
- 1 cup wild rice (rinsed)
- 1 1/2 cups long grain white rice (rinsed)
- 2 tbsp olive oil
- 3 cloves of garlic (chopped)
- 1 tsp garlic powder
- 2 tbsp parsley (chopped and divided in 2 portions)
- salt
Instructions
1- Cook wild rice according to the directions on the package
2- Thoroughly rinse the plain rice in another container to remove excess starch
3- In a medium sized saucepan, heat oil over medium high heat. Add minced garlic and stir it frequently until it is soft (about 2 minutes)
4- Add 1/2 cup of the vegetable broth, along with the salt and garlic powder, to the cooked garlic. Bring this to a boil and then add your plain rice
5- Stir until the rice grains become translucent. Add the remaining liquid (water and broth) and bring to a boil. Reduce the heat to low and cover with a tight-fitting lid. Simmer until liquid is absorbed and the rice is completely cooked.
6- When the plain rice is done, add half of the chopped parsley and the cooked wild rice to it. Reserve the rest of the parsley for serving.
