Pumpkin Chocolate Overnight Oats | Vegan Pumpkin Oatmeal Recipes

This pumpkin overnight oatmeal recipe is dairy-free, gluten-free, versatile, and delicious. With a few ingredients, you can make a variety of pumpkin chai oats, pumpkin spice oatmeal, and pumpkin chocolate oatmeal. The best part is that these pumpkin overnight oats can be made in less than 15 minutes.

How To Make Pumpkin Overnight Oats

The easy way to make overnight oats is to combine oatmeal, milk, spices, and sweetener with cooked pumpkin. This recipe uses homemade pumpkin puree but you can also use canned pumpkin for quicker meal prep. I personally use a lot of cooked pumpkin instead of canned pumpkin puree. 

You can set this in the fridge overnight or give it a couple of minutes at room temperature before you consume it.

To make a healthy overnight oats recipe, use less sugar, or replace it with honey, stevia, or maple syrup. For this recipe, coconut milk is used to add creaminess and thickness to the recipe. You can also use more chia seeds than oatmeal if you want a low-calorie pumpkin overnight oats recipe.

Cooked Pumpkin or Pumpkin Puree?

It really depends on three things:

  1. The time you have
  2. The type of recipe you’re making
  3. Whether or not you have raw pumpkin or canned pumpkin puree

Cooked pumpkin has more fiber, flavor, and nutrients. It also adds a lot of thickness to smoothies and oats without adding ice. The pumpkin flavor is a lot more pronounced as well.

If you want to add cooked pumpkin to this recipe, simply peel, and cube 2 cups of pumpkins. Place it on a steaming basket in a medium pot with boiling water. Cover and cook for 10 minutes or until tender.

Pumpkin Chocolate Overnight Oats Recipe

Makes 1 serving 

Ingredients:

  • 1/2 cup rolled oatmeal
  • 1/2 cup pumpkin puree
  • 1/4 cup water
  • 1/2 cup coconut milk or almond milk
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice or chai spice
  • 1 tsp vanilla extract
  • 1 pinch salt

Chocolate base: 

  • 1 tsp cocoa powder
  • 1 tsp brown sugar
  • 1 tbsp chia seeds
  • 1/4 cup coconut milk

Method

There are two layers in this recipe. First, make the chocolate base by combining the cocoa powder, brown sugar, chia seeds, and coconut milk in the container of your choice. Set it aside for 5 minutes so the chia seeds can thicken.

In another container, combine the remaining ingredients for the pumpkin chai oatmeal and add it to the chia mixture. 

You can enjoy this recipe right away or keep it in the fridge for up to 3 days.
