Pumpkin Almond French Toast Recipe

It’s a gray Saturday morning at home. Since I’ve been on a pumpkin-binge for about a week now, this was a great excuse to go in the kitchen and perfect this pumpkin french toast with almonds.

To be honest, I’ll accept almost any reason to make an easy pumpkin recipe.

It’s not unbelievable that I’ve had to make  a batch of homemade pumpkin puree at least twice a week to keep up with myself.

This pumpkin almond french toast recipe is a bit different from my other pumpkin recipes though. Instead of using pumpkin pie spice to complement the pumpkin, I decided to go for almond.

This is one of those moments where you make something amazing by accident because what happened was that I ran out of pumpkin spice and vanilla. I’ve never been so happy to run out of pumpkin spice and vanilla.

What I did have on hand- this almond extract, turned out to be exactly what I needed to bring this recipe to life. Combined with milk, sugar, egg, pumpkin puree, cinnamon, and nutmeg, this pumpkin french toast recipe is one big serving of flavor in just 15 minutes.

Pumpkin French Toast Recipe

Prep time: 15 minutes

Ingredients

  • 2 cornbread rolls (sliced in two) or 4 slices bread
  • 1/4 cup pumpkin puree
  • 1 tbsp granulated sugar
  • 2 tbsp coconut oil
  • 1 egg, whisked
  • 1 tsp almond extract
  • 3 tbsp milk
  • 1 pinch nutmeg powder
  • 1 pinch cinnamon
  • Almond slices to top

Method

1-In a medium bowl, combine the pumpkin puree, granulated sugar, egg, almond extract, milk, nutmeg powder, and cinnamon.

2- Heat a frying pan with 1 tbsp coconut oil. Ensure that the bottom of the frying pan is covered in a thin layer of oil.

3- Immerse one slice of bread in the pumpkin mixture and turn to ensure both sides absorb the liquid. After the liquid is absorbed in the bread, remove it from the liquid and and put in a different container. Repeat for 4 slices of bread.

4- Place each slice of bread in the pan and fry on each side for 1 minute or until golden brown, adding more oil when necessary. If you use rolls, the slices will be thicker so fry all 8 sides to ensure the french toast is properly cooked.

5- When all sides are cooked, remove from heat and top with maple syrup and almond slices. 

6- Serve hot and enjoy.
