This version of the traditional pumpkin bread recipe is all sorts of flavourful. spicy, and warm. It’s the perfect snack to have with black coffee or a warm chai latte.
The best part is that it is quite easy to make too.
For the Pumpkin Chai Loaf:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons chai spice mix (or a combination of ground cinnamon, cardamom, cloves, and ginger)
- 3/4 cup unsalted butter, softened
- 1 1/2 cup granulated sugar
- 2 large eggs
- 1 cup canned pumpkin puree
- 1/4 cup buttermilk
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium-sized bowl, whisk together the flour, baking soda, baking powder, salt, and chai spice mix. Set this dry mixture aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture becomes light and fluffy.
- Add the eggs to the butter-sugar mixture, one at a time, beating well after each addition.
- Stir in the pumpkin puree, buttermilk, and vanilla extract until the mixture is well combined.
- Gradually add the dry mixture to the wet mixture, mixing until just combined. Be careful not to overmix, as this can make the loaf dense.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean. Keep an eye on it, as baking times can vary.
- Once the loaf is done, remove it from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
