1- Place the oven rack in the middle position, and place a 9-inch cast iron skillet on the rack. Then preheat the oven to 450°F (230°C).
2- In a blender, place the milk, eggs, flour, sugar, salt and vanilla extract. Blend until smooth. Set aside.
3- Once both the oven and the skillet are very hot, remove the skillet from the oven. Melt the butter in the skillet, and add the pancake batter. Bake for 15 minutes or until the pancake is puffy and golden brown.
4- Sprinkle generously with icing sugar and top with fresh blueberries, strawberries, or other fruits. Serve warm and enjoy!
